Add all ingredients to an Old Fashioned glass.
Using a mortar and pestle, crush the lime pieces to extract the juice and essential oils and to dissolve the honey.
Fill the glass 3/4 full with crushed ice and stir with a spoon.
Add crushed ice and garnish with lime wedges.
