2 oz of Amber Rum
1 oz rich Demerara syrup (or brown sugar) 
¾ oz fresh lime juice 
Fresh mint leaves 
Angostura bitters 
Crushed ice

Prepare the glass: In a highball glass, add a handful of mint leaves and stir them gently with a mixing spoon to release their essential oils.
Add the liquid ingredients: Pour the amber rum, Demerara (or brown sugar) syrup and fresh lime juice into the glass.
Chill and dilute: Add a portion of crushed ice and mix with a swizzle stick (or bar spoon) until the glass is very cold.
Top up and garnish: Fill the glass to the top with crushed ice. Add a few drops of Angostura bitters to the top. Garnish with a sprig of fresh mint and a straw.
